We love to know each species, what is its season and optimum time of capture and, especially, what is the best technique to enhance its natural flavour.
Gentle cooking, such as grilling, preserves the delicacy of the fish, while honeyed or dry rice dishes bring out its flavour, while the oven is reserved for other products such as cod, which you can find on our menu and which we prepare with aioli.
Whenever we can, we like to prepare suggestions of the day or of the week, either with fried caprroig with onion rings and potatoes, grilled monkfish or baked in the oven.
This fish is known for its firm flesh and creamy consistency, and lends itself admirably to more elaborate preparations to transform it into an elegant and sophisticated dish.
Sea bream and other pieces
Sea bream is superb when salted, a traditional method that creates a crust that completely seals the fish, preserving all its natural moisture and flavour. When this salt crust is broken, a tender, juicy fish emerges, with an intense marine flavour.

The scorpion fish, or caproig, has a firm texture that is ideal for stews and casseroles. Its intense flavour makes it the star of traditional fishermen’s dishes, where it is combined with potatoes, saffron and a fried onion and tomato sauce.
And the John Dory, with its delicate white flesh, is perfect for gentle cooking. Steaming it with seasonal vegetables or cooking it en papillote with aromatic herbs brings out its subtle flavour and delicate texture.
